On The Eighth Day of Christmas Cookies

On The Eighth Day of Christmas Cookies.
I thought I’d bake for you. . .

Mandelschnitten

Now you might get a laugh out of this one. I acquired this recipe from a
lady that I worked with 20 years ago. As I was going through all my recipes
I really
wanted to post this one because it is a good one and an easy one to make for
the Holidays. But I couldn’t read my own writing :0) so I was not sure what
the name really was, or the proper spelling. Thanks to Jackie, she wrote and
gave me the correct spelling. Thanks so much.

1 cup butter
1 cup sugar – divided
2 egg yolks
grated rind of 1 lemon
1 cup finely grated almonds Sift almonds, using the very fine for topping
the cookies. The other in the cookies.
3 1/4 cup flour approximately

** Save 1/4 cup sugar and 1/2 cup almonds for topping

Cream together butter and 3/4 cup sugar.
Add egg yolk, one at a time.
Add lemon rind and enough flour to stiffen. add almonds last.
Roll out 1/4 inch thick, cut into diamond shapes. Brush with egg whites and
sprinkle with sugar and nuts.

Bake 350º for 10 minutes or until brown on edges.
Cool on wire rack.

I roll my dough on a pastry cloth and use a pizza wheel cutter to cut my
dough. It works great.
