“Necessity is the mother of invention.”
Some of my most brilliant times happen out of necessity. Once I was making stuffed peppers and I did not have all the tomato products the recipe called for so I substituted salsa and they turned out wonderfully. Now I only make stuffed peppers with salsa. Yum!
Here’s my recipe just in case you are interested:
4 large green peppers cut in half
1 1/2 lb hamburger
1 jar salsa
bag shredded cheese – use the cheese of your choice
Preheat oven to 350 degrees
Clean out the seeds from the peppers and boil them for about 5 minutes. Drain on paper towels before placing in a shallow baking dish (I generally use a 9×13 pan)
Put hamburger back on low heat and add salsa and mix well
When salsa is mix in well add in most of cheese
(you need to keep enough cheese to top each pepper)
After cheese is melted and everything is nice and thick turn off heat and spoon mixture into peppers
Top with cheese
Cover and bake for about 40 minutes
